Olite, reputed as one of the 'Flowers of Navarra' since the 17thC, is a prosperous little country town whose economy is based mainly on agriculture and wine growing. It is dominated by the enormous, battlemented 15thC castle of Carlos III, and right next door to it is the even older Parador, with a delightful garden, antique furnishings and Navarrese gourmet treats in the restaurant, perfectly accompanied by a choice of local wines. The castle is beautifully illuminated at night, and the medieval stained glass in the hotel bathes the dining room and lounges with a soft, romantic glow. Superior rooms are available.
